Slow Cooker Beef Chili That’ll Knock Your Socks Off
Hearty, bold, and effortless—this Slow Cooker Beef Chili is loaded with beef, beans, and spices for the perfect cozy comfort!
Ingredients
- 2 lbs ground beef go for 80/20 for best flavour
- 1 large yellow onion diced
- 3 cloves garlic minced
- 2 cans kidney beans drained and rinsed
- 1 can diced tomatoes with juices
- 3 tbsp chili powder or adjust to taste
- 1 tbsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika – optional adds a nice smokiness
- 1/4 tsp cayenne pepper – optional for an extra kick
Instructions
- Brown the Beef & Onion: Heat a large skillet over medium-high. Add the onion, ground beef, break it up, and cook until browned. Drain the excess fat and add beef to your slow cooker.
- Add the Good Stuff: Toss in the kidney beans, diced tomatoes, and spices. Stir it all together until combined.
- Slow Cook Magic: Set your slow cooker to Low for 6–8 hours, or High for 3–4 hours. The longer it simmers, the richer the flavors.
- Serve It Up: Ladle into bowls and top with your favorites: shredded cheese, sour cream, green onions, or crushed tortilla chips.
Notes
Bold it Up: Add a splash of beer or a bit of cocoa powder for a deeper, richer flavor.
